Citrus and Pomegranate Oatmeal

I’m always looking for ways to add more color and nutrients to my wintertime breakfast rotation, and this easy steel cut oatmeal recipe does just that. 

This Citrus and Pomegranate Oatmeal is packed with delicious, nourishing winter fruits and spices. Energizing orange and pomegranate and warming oats, cinnamon, and cardamom create the perfect balance in this easy winter breakfast.

Citrus and Pomegranate Oatmeal

Ingredients: 

  • 1 cup water

  • 1 cup almond milk

  • 1/2 cup steel cut oats

  • 1/4 tsp cinnamon

  • pinch of cardamom

  • juice from 1/2 orange

  • 1/2 tsp orange zest 

  • 1 tsp maple syrup (less or more to taste)

  • Toppings: orange slices, pomegranate seeds, chopped almonds, cinnamon 

To make: 

  1. Bring the water and almond milk to a boil in a medium saucepan. 

  2. Once boiling, stir in the steel cut oats and a pinch of salt. Reduce heat and simmer for 20 minutes, adding water if needed to thin it out. 

  3. Remove from the heat and stir in the cinnamon, cardamom, orange juice, orange zest, and maple syrup. 

  4. Transfer to a bowl and top with orange slices, pomegranate seeds, chopped almonds, and cinnamon.
